Alcoholic fermentation at a controlled temperature and with daily pumping over in self-emptying stainless steel tanks. Uncuffed and soft pneumatic pressing. Spontaneous and directed malolactic fermentation is carried out at constant temperature. Static clarification and filtration by earth and cellulose plates prior to bottling.
