Terra do Castelo Mencía 2018

Vintage selected by hand in boxes of 15 kg. Destemmed and macerated at low temperature before fermentation to extract the maximum potential of color and aroma. Alcoholic fermentation at a controlled temperature and with daily pumping over in self-emptying stainless steel tanks. Uncuffed and soft pneumatic pressing. Spontaneous and directed malolactic fermentation is carried out at constant temperature. Static clarification and filtration by earth and cellulose plates prior to bottling.

  • Pairing:

    Plates of medium consistency. Cooked vegetables, fish and boiled and roasted meats, (stews, octopus a feira, Galician stew).

Taste/notes:

Colour: Violet cherry red, clean and bright.
Aroma: Good aromatic intensity, with aromas of fresh red fruits. Spiced notes of  pepper and nutmeg.
Taste: The palate shows a medium structure, fresh and fruity, with red acid fruit flavors, spices and a licorice background.
