Vintage selected by hand in boxes of 15 kg. Destemmed and pressed in cold after short maceration of three hours in pneumatic press. Detangling and subsequent controlled fermentation at low temperature. Transfered, clarified and filtered by diatomaceous earth, stabilized and amicrobial bottling.
